Pies don’t have to be overcomplicated, either. It’s easy to create a pie with just three ingredients. The only way to make a pie faster than this would be to buy one that’s already made.

Easy pie recipe with few ingredients
Gently poke the bottom of the pie crust with a fork and place it in a preheated oven to blind bake. Blind baking is the process of lightly baking a crust before adding any filling. This gives it a head start and helps prevent a soggy crust once you add the filling and bake.
While the crust is baking, prepare the filling. You’ll need:
- 4 cups of frozen cherries or a frozen fruit you’d enjoy in a pie.
- 1 cup sugar.
- ¼ cup cornstarch.
Combine the ingredients in a pot on the stove over low to medium-low heat. Let the mix come to a simmer. Be careful not to let it boil. The mix can go from slightly watery to thick very quickly, so keep an eye on it. Once it starts to bubble and thicken, remove it from the heat to prevent burning or scorching.
Remove the crust from the oven. It will still be pretty raw since it was only in the oven for a few minutes. This is normal! Just the little bit of heat it was exposed to is enough to set the outside of the crust so the filling won’t make it soggy.
Add your thickened filling to the crust. If you want to, top it with another pie crust or add a lattice design. Pop it in the oven and let it finish baking. It should take about 20-25 minutes, however double check with the baking directions that came on the pie crust packaging.
Pro tip: Put the pie pan on a cooking sheet lined with foil to catch any drips in the baking process. This will also make cleanup a breeze.
Let the pie cool slightly before serving. Top with a light dusting of powdered sugar, homemade whipped cream or both!

Pie shield foil
Nothing ruins a pie faster than a burnt crust! Enlisting the help of a pie shield will help protect the outside while the inside bakes through.
You can buy a pie shield designed to prevent this common mishap, but you can also make one with aluminum foil.
- Get a sheet of aluminum foil that’s slightly larger than your pie pan.
- Fold it in half, fold it in half again, then fold it so it creates a triangle.
- Align the point of the triangle with the center of the pie and then cut the opposite end in a semi-circle parallel to the edge of the pie pan. The foil should look like a pizza slice.
- For an open center pie shield, remove some of the center by cutting off some of the bottom part of the foil.
- You should be left with a few inches of foil. Unfold it and lay it over the crust. It should look like an 'O' that fits over the edges. Adjust it as needed.
Make the pie shield before putting the pie in the oven. Add it to the pie if you notice the edges browning too soon in the baking process.
